Etta Fijian Chicken Curry

After a epic adventure in the pacific islands of Fiji. I was lucky enough to win over Etta at the Nadi Bay Resort kitchen to be shown how to make her tastiest chicken curries. Fijian local food is a mix of Indian and pacific island. So you get a lot of great fresh seafood dishes as well as light (ie not too heavy) curry meals. Eatta has a super simple recipe here which is extremely healthily, low amount of oil and plenty of good herbs and spices. Did you know Turmeric is a natural anti-inflammatory so is great for post surfing to help your body recover. These ingredients don’t cost a bomb, fast meal to make with low dishes, and the ingredients are easy to come by as well. So we think this is great for living a MoonRocks #vivediferente lifestyle #simplelife, enjoy. 


  • You will need (serves 1, so you can just mulitply for more people) 
  • Oil (vegtable oil, or olive will do)
  • Fresh Kaffa Lime leaves (if you cant find them I used curry powder and worked out pretty good as well)
  • Onion (1 medium diced)
  • Tomato (1 medium diced)
  • Grated Ginger
  • Grated Garlic
  • Mustard Seeds
  • Gram Masala
  • Tumeric
  • Chicken Stock
  • Diced Chicken breast (Diced)
  • Corriander
  • Rice
